FONTINA DOP (U) £3.40 per 100gm
From the Valle D’Aosta this cheese has a firm texture and fruity taste. Excellent
for melting.
GONGONZOLA DOLCE (CREAMY) £2.65 per 100gm
With a texture of ripe brie, this has to be the most luxurious mild blue cheese
we have ever tasted. Fantastic.
PARMIGIANO REGGIANO (U) £3.25 per 100gm
The ‘Genuine’ 2 year old parmesan. Only ‘Reggiano’ is true parmesan.
Wonderful nutty flavour excellent either grated or in shavings.
PECORINO GIOSIOSA SARDO (S) £3.15 per 100gm
Mature sheep’s milk pecorino from Sardinia, with a firm texture and nutty flavour.
RASCHERA (U) £2.90 per 100gm
Made in the Piedmont region in the mountains around Mondovi this cheese
has an ivory semi-soft interior with small irregular holes. The cheese has a
slightly spicy flavour with a clear hint of saltiness.
Cheeses are made in either a flat round or as a square tablet (as per picture)
which makes it easier to transport off the mountains by donkey.
TALEGGIO £2.15 per 100gm
Centuries ago this cheese was made in the Alpine regions, but is now made
in the Po Valley. Delicious semi-soft creamy cheese, with a distinctive orange rind, whose flavour increases with maturity. Excellent cheese for cooking with, but equally good sliced thinly and served with parma ham in a crusty baguette.
UBRIACO (U) £3.50 per 100gm
Made in the highlands of Lombardy, this cheese is immersed in a young Chianti
before it is set to age. Ubriaco actually means ‘drunk’ in Italian.
When first eaten it appears to have a rather mild flavour with a hint of red wine, but
as it moves over the taste buds, it will leave you with a sharp and spicy aftertaste.
